Figure 8 in the data sheet for part number STUSB4710 shows the inductor value to be 68µH. This seems large. Is it possible this should be 6.8µH?

The Schematic in the STUSB4710 datasheet is a copy of the STEVAL-ISC004V1 evaluation board schematic.

The value is 68uH in this case.

The inductor value depends on the application.
